Coconut Oatmeal Energy Cookie Bites

Want to break out of a breakfast or snack time rut? Cookie energy bites are the answer. They’re easy too—no baking required! These convenient treats combine nutritious, all-natural ingredients and taste way better than energy bars. Did we mention they’re mostly made of cookies? Vegan cookies to be exact. Our delicious Coconut Oatmeal Cookies add their signature toasted coconut, cinnamon, and brown sugary notes to your recipe. The rest of the additions are entirely customizable, but here’s what we recommend:

Instructions:

  1. In a blender or food processor pulse Coconut Oatmeal Cookies until they reach a crumbly and moldable consistency. As their name suggests, these cookies are packed full of organic, gluten-free oats, the main ingredients in traditional energy-bite recipes.

  2. Your blended cookies should reach a butter-like texture, enough to roll them into bite-sized balls. Now you could stop there, or add this crushed cookie ‘butter’ to a large bowl and toss in the rest of your desired ingredients.

  3. Have fun selecting your favorite flavors and nutritional elements, like a spoonful of almond butter, maple syrup or honey, chia seeds, flax seeds, raisins, etc. 

  4. Roll your energy-bite batter into 1-inch balls and place them on a parchment paper-lined cookie sheet. 

  5. Refrigerate your Coconut Oatmeal Energy Bites for 30 mins until firm.
