Oatmeal Coconut Lemon Bars

The ultimate summer vibes in every bite—tangy lemon, tropical coconut, and crumbly oatmeal cookies unite for one epic dessert!

Ingredients:

  • 1 box of Steve & Andy's Vegan Coconut Oatmeal Cookies (your tropical crust!)
  • 4 large eggs
  • 1 1/2 cups granulated sugar 
  • 1 cup all-purpose flour
  • 1/2 tsp baking powder
  • 2/3 cup freshly squeezed lemon juice 
  • 1 tsp lemon extract 
  • Zest of 1 lemon 
  • Powdered sugar (for that final flourish)
  • 1/2 cup melted butter or vegan butter substitute (optional but makes the crust hold tight!)

Instructions:

  1. Preheat the oven: Set to 350°F (175°C) 
  2. Crush the crust: Crumble the entire box of Steve & Andy’s Vegan Coconut Oatmeal Cookies into a bowl. To better bind the crust, stir in the melted butter or vegan substitute until evenly mixed.
  3. Press & bake: Press the cookie mixture firmly into the bottom of a 13x9-inch glass baking pan, making sure it’s nice and even. Pop it in the oven for 15-20 minutes until it’s lightly golden and smells amazing.
  4. Whisk it up: While the crust is baking, whisk together the eggs, sugar, flour, and baking powder until smooth like a summer breeze.
  5. Bring on the lemon: Stir in the freshly squeezed lemon juice, lemon extract, and zest 
  6. Pour & bake (again): Take the crust out of the oven and immediately pour the lemon mixture over it. Bake for another 20-30 minutes until set and just lightly browned on top. It should wiggle but not jiggle!
  7. Cool it: Let the bars cool completely in the pan (if you can wait that long) before dusting them with powdered sugar.
  8. Slice & serve: Cut into 12 delicious bars and enjoy your tropical, tangy creation!
